Certified wine flavour standard used to train professional tasters to recognize and scale the intensity of grape-like character. Aminoacetophenone is a character contributed through use of certain grape varieties. It can also be formed in wine from the amino acid tryptophan during a phenomenon known as atypical ageing. This compound imparts a fruity, grape-like odour, reminiscent of putty and taco shells depending on the concentration.
