Geosmin imparts an unpleasant earthy odour to water, reminscent of sugar beets or damp soil. It is extremely flavour-active and for that reason one of the most common flavour problems associated with potable water. This earthy flavour is formed by bacteria and algae in reservoirs, lakes and pipework. It is produced by actively-growing microorganisms and also arises as a result of the decomposition of dead cells.
