Metallic, like ink or blood”

Certified soft drinks flavour standard used to train professional tasters to recognize and scale the intensity of metallic character. Metallic notes are contributed to soft drinks via contaminated raw materials or process water, or through corrosion of process plant. Metallic odours can also originate from lipid oxidation.
